Geographical environment
Longnan City is located in the southeastern border of Gansu Province. It is the only Yangtze River Basin region in Gansu and the only southern region of Gansu's four major geographical regions. It connects Shaanxi to the east, Sichuan to the south, Tianshui to the north, and Gannan to the west. It is the key point for Gansu to go south and out east. The total area is 27,900 square kilometers. The city has jurisdiction over one district and eight counties, namely Wudu District, Chengxian, Huixian, Liangdang County, Dangchang, Wenxian, Kangxian, Xihe County, and Lixian. It has 242 towns and 3,422 administrative villages. There are 23 ethnic groups including Han, Hui, Tibetan, Manchu and Zhuang, with a total population of 2.798 million, including an agricultural population of 2.4147 million.

Longnan Snacks
Longnan people, especially Wudu people, attach great importance to food and clothing, so there are many kinds of snacks. The more famous snacks are:
1. Potato dough: made of specially made wooden troughs from almond, birch, pear and walnut trees. The cooked and peeled potatoes are smashed into a puree, which is equivalent to the glutinous rice cake in the south. It must be the high-starch potato unique to Wudu, Gansu. The soup is made from Wudu’s special vinegar plus Wudu Anhua pepper and Wudu Dahongpao pepper powder.
2. Cornmeal fish: Stir the cornmeal into a paste in a large iron pot. Cooked. Made with a special spoon. Vinegar spicy soup or Wudu pickled cabbage soup.
3. Rice skin: Wudu Liangshui Hanwang rice, soaked and beaten. Steamed on a special wooden cage bed. The soup is the same as the dumplings. You can add minced garlic.
4. Dough: Wash wheat flour into dough. Use iron steam pan.
5. Pickled cabbage noodles: Wudu pickled cabbage. It has excellent antipyretic and heat-relieving effects. Hand-rolled dough.
6. Tofu pudding and pickled cabbage noodles: The fragrant tofu pudding just ordered. Noodles can be diverse. But the general requirement is to hand-roll the noodles. Buckwheat noodles. Cornmeal. Wheat noodles. Zamian.
7. Buckwheat flour: Mountain buckwheat, a specialty of Wudu. Use buckwheat Sadako facial cleanser. Cooked. solidification. The soup is the same as the potato dumplings.
8. Egg noodle tea: Wudu tea leaves are fried. Brew into tea. Add cooked flour. Cooked in special clay pots. Add scrambled eggs.
9. Kang Bao (zi): Steamed buns are cooked in a pan.
10. Buckwheat noodles: Buckwheat noodles are spread into pancakes like lotus leaves. Add shredded potato and green pepper and stir-fry.
11. Ground soft-eared buns: a soft black-purple fungus that grows on the ground in spring and autumn. A vegetarian dish made with mushrooms, shiitake mushrooms and fungus. It tastes great.
12. Wheat kernel wine: peel new wheat. Cooked. Install the cylinder. Fermented with special wine vinegar. Fresh fragrance. Can go up. Relieves summer heat, protects health, and is a diuretic.
13. Buckwheat noodles and corn noodle dumplings: paste, cooked. Place in a porcelain basin, cool down, and solidify. Slice and serve with sauerkraut soup. It relieves summer heat, is easy to digest and strengthens the stomach.
14. Shredded potato cakes: Mainly made of shredded potatoes, add appropriate amount of flour, pepper powder, fine salt, and shredded green onions, and fry them in a pan. Thickness 1-3 cm
15. Wudu kimchi: special jar. Mountain spring water on the sixth day of the sixth lunar month. Green salt. Wudu peppercorns. seasoning powder. Jerusalem artichoke, radish, carrot, cabbage, cowpea, etc. are included. Especially sour and tasty.

24. Wudu stinky tofu: Tofu cubes are marinated with wine, chili pepper and Sichuan pepper powder. When eating, put it into steamed buns, it is very fragrant.
25. Spicy potato powder: The potato powder is made from local potato and is of first-class quality. Add shredded kelp and green vegetables. Add Sichuan pepper powder and Wudu Anhua chili powder to the soup. Old onions are also good.
26. Sliced ??noodles in chicken soup: Day lily, pepper powder, shredded green onions, and garlic sprouts are added to the chicken soup. The shaved noodles are authentic Shanxi style. Just like silver fish in the waves.
27. Potatoes mixed with olive oil: Peel the cooked purple potatoes, chop them finely in a large bowl, and add a small amount of olive oil. Because olive oil is a specialty of Wudu and expensive, it is a bit of a luxury in other places.
28. Tender corn pancake: made by pressing tender corn into juice and adding appropriate amount of wheat flour.
29. Pancake roll with green pepper and potato shreds: Fried green pepper and potato shreds. Wheat flour pancakes rolled up.
30. Noodle balls: Wheat flour, eggs, and water are stirred into a paste. Cut into small balls with chopsticks and fry in clear oil until cooked.
32. Wudu pickled cabbage soup: Wudu pickled cabbage, pickled with wild bitter vegetables, wood knotweed, celery stems and leaves, wild silver calcium vegetables, and bitter vegetables. When fermented, the vegetables are crispy and sour. In traditional Chinese medicine, they all belong to the detoxifying, heat-clearing, and relieving type. When making soup, stir-fry it with clear oil and add shredded green onions or wild chive flowers. Add shredded potato. You can also add flour to make sauerkraut soup.
