Yang (1822- 1890), whose real name is Shoushan, is the founder of Quanjude Roast Duck Restaurant and a native of Yangjiazhai, Jixian County, Hebei Province. When I first arrived in Beijing, I bought and sold raw chickens and ducks in a street in Qianmen meat market. Business is booming, and I have some savings. 1864, there is a grocery store opened by Shanxi people in the alley of the meat market. After being introduced, Yang laid the foundation of the grocery store and opened a hanging stove shop himself. The name of this grocery store is Dejuquan, which means "gathering wealth with virtue and getting wealth with virtue". Yang reversed the font size and changed it to Quanjude. The whole word implies his name, Jude, which means "Quanjude is rich in financial resources".
It is said that when Yang opened Quanjude, he invited a Feng Shui gentleman. Mr. Feng Shui said that the two alleys next to the shop are two sedan chair poles, and a new building in the middle is equivalent to carrying a sedan chair, which is sure to be successful. Legend belongs to legend, but under his painstaking efforts, Quanjude has really developed from an ordinary bakery into a veritable restaurant featuring hanging roast duck and various kinds of stir-fry dishes.
