Carp is no stranger to most people. It was once called the first brother of freshwater fish, why didn't it even have the title of four big fish?

I know a lot about carp farmers. One of the famous dishes is braised carp. Speaking of the fish with the longest breeding history in China, that is carp, which can be regarded as the true ancestor of domestic fish. They began to breed in large quantities before the Tang Dynasty, and their breeding technology was very mature.

The four famous fish refer to herring, grass carp, silver carp and bighead carp respectively. The reason why there were no carp was because there was a saying among the people at that time that the Tang Dynasty was Li's world and it was forbidden to buy and sell carp because of taboos.

It was also from this time that farmers did not raise carp, but sold other fish, such as herring, grass carp, silver carp and bighead carp. Because these four kinds of fish are easy to raise, suitable for polyculture and have high nutritional value, they are called the four major fish. In the Song Dynasty, even if you could buy carp, it was 300 years later. Many people have formed the habit of not eating carp among the people. In addition, many fish have higher nutritional value than carp, so carp is separated from the four major fish.

It is also said that the meat quality and taste of carp are much worse than other kinds of fish. It is an omnivore with a strong smell of mud. Many people don't like carp, and some even say it is the most unpalatable freshwater fish.

In the south, boiled fish is mainly steamed in order to pursue the original flavor. However, due to the heavy smell of carp, it is really difficult to swallow, which is one of the reasons why it is not called the four major fish.
