Since Quanjude is mentioned, I have to mention a mouthful of Beijing roast duck. According to the Book of Food, roast duck originated in China in the Southern and Northern Dynasties. It is a famous court dish, which is made of authentic Beijing roast duck. It is not only ruddy in color and delicate in taste, but also fat but not greasy, which makes people memorable. In addition, the raw material "Beijing Duck" is a kind of "pure white wild duck" discovered by the Liao, Jin and Yuan emperors 1000 years ago. In order to be used for hunting in the future, it will continue through artificial reproduction. Over time, the wild white duck was fed as a "stuffed duck" and later became a Beijing duck.
However, the spread of roast duck to the people is due to two emperors, Zhu Yuanzhang and Judy. After the founding of the Ming Dynasty, Zhu Yuanzhang finally lived a full life. Like Nanjing people, he has a soft spot for Nanjing salted duck. According to historical records, Zhu Yuanzhang's "A Roast Duck during a Solar Eclipse", in order to please the emperor, the chefs in the imperial palace racked their brains to improve the taste of roast duck. After a long period of research and experiments, they finally worked out two techniques: barbecued roast duck and braised roast duck, and Quanjude, which gradually emerged after 500 years, was the peak of barbecued roast duck.
In A.D. 1402, Judy of Ming Taizu ascended the throne. Like Zhu Yuanzhang, he has a soft spot for roast duck. A few years later, Judy moved to Beijing. In order to enjoy Nanjing cuisine, he brought a bunch of chefs, especially those who are good at cooking roast duck. Thus, when the chef's skills were combined with Beijing roast duck, the famous Beijing roast duck was born. Compared with the previous Nanjing roast duck, the taste of Beijing roast duck is even higher. But at that time, Beijing roast duck was not very famous, and Nanjing roast duck was still the favorite of the people. Therefore, when the first roast duck restaurant "Cheap Square" opened in Jiajing period, a small word was engraved on the plaque: Jinling Roast Duck.
However, no matter what kind of food, it needs to keep pace with the times, and Beijing roast duck is no exception. If you keep using the name "Nanjing", you will only cut yourself off and there will be no breakthrough development. In addition, with the appearance of "cheap square", there are many stalls selling roast duck in the market. Although the name is not as loud as "Cheap Square", it tastes similar, and because the price is close, ordinary people are willing to pay the bill. However, Beijing Roast Duck ushered in a subversive reshuffle at 1864, and Yang alone shook the whole roast duck industry.
Yang, 1822, a native of Yangjiazhai Village, Xujiazhuang, Jizhou, Hebei Province, came to Beijing as a child because of his poor family and lack of money to go to school. Soon after, Yang saved some money. He rented a stall in the meat market street outside Qianmen, and he was engaged in selling chickens and ducks. Yang is a very clever man. He quickly learned the skill of selling ducks. Looking at the whole meat market, his business is the most prosperous. After more than ten years, Yang made a lot of money, and a small booth could no longer satisfy his appetite, so he began to ponder new business opportunities.
1864 One day, Yang accidentally noticed that something was wrong with a dried fruit shop called "Dejuquan". He passes by this shop every day when he goes out to the food stall. However, although the brand of this store is eye-catching, it seems that no customers have come to the door in recent months and it is almost on the verge of bankruptcy. So, Yang made a decisive decision and invested to buy this store. Based on his previous business, he plans to open a barbecue shop. However, the business is finalized, but the name of this store is a problem. If there is no name that can bring good luck (people were superstitious at that time), it may be inevitable that the dried fruit shop will end up.
So, Yang invited a Feng Shui gentleman to help him have a look. Mr. Feng Shui observed it first, and then combined with the terrain to flatter Yang, saying that it has the appearance of "eight carrying big sedan chairs" and its future is limitless. Finally, Mr. Feng Shui insisted that the previous "Dejuquan" closed down only because of its bad name. If you want to get rid of bad luck, you only need to reverse the word "moral integrity" and luck will come back.
Hearing this, Yang immediately beamed. He immediately adopted Mr. Feng Shui's suggestion and changed his name. Of course, Yang has other ideas. First, because his name has the word "Du"; Secondly, it is because the word "Jude" is extremely appropriate. The so-called "gathering virtue" means gathering virtue, which not only raises the facade, but also conveys his business integrity concept, which can be described as "killing two birds with one stone". Sure enough, under the careful management of Yang, Quanjude is thriving. Compared with the outside, the roast duck in his shop is more delicate and deeply loved by diners.
However, if you want to succeed in business, it is not enough to have ducks, and the roast duck master is also essential. So, Yang went to other shops for a stroll when he was free. When he met a skilled master, he spent a lot of money to dig it back. Although this means some unfairness, it is also reasonable. Later, Yang invited Master Sun, a court chef who is good at hanging roast duck. With his joining, Quanjude became famous and soon spread to everyone's ears.
After the founding of New China, Quanjude Roast Duck was designated as a state banquet, and it was the uncrowned king in the roast duck industry. 1May, 993, China Beijing Quanjude Roast Duck Group was formally established, and Quanjude became bigger and bigger, becoming a food symbol of Beijing step by step. However, now Quanjude is facing a rare loss. In the first half of the year, the company lost hundreds of millions of yuan, and the once proud roast duck has declined slightly. Catering business has always been the pillar of Quanjude's revenue, accounting for more than 70% of the revenue and half of the whole company.
Unfortunately, the store consumption of Quanjude is not affordable to ordinary people, especially the service charge exceeding 10%, which is even more criticized. Generally speaking, a store that charges a service fee at such a high price will not treat customers badly, but many people say: I really dare not compliment. What's more, a duck who travels frequently for 200 yuan has already exceeded the tolerance limit of ordinary consumers. You know, you can buy as many as five roast ducks at the same price elsewhere. Since the tastes are not much different, why choose Quanjude? Diners' mouths don't lie. Between logo and taste, most people still choose the latter.
