A few days ago, Anhui Cuisine Society awarded the People's Government of Shangzhuang Town, Jixi City the title of "Hometown of One Pot of Anhui Cuisine in China". Jixi, a thousand-year-old city, is the birthplace of Anhui cuisine. In September 2005, Jixi was awarded the title of "Hometown of Anhui Cuisine in China" by China Cuisine Association and "Hometown of Chefs in China" by China Cuisine Association in 2007. As one of the golden cuisines of Anhui cuisine, Yipin Pot has a long history, which complements the prosperous writing style, developed businesses and celebrities in this area. Emperor Qianlong and Yipin Pot
According to legend, when Qianlong was traveling incognito in southern China, he saw that it was getting late on the way from Jiuhuashan to Huizhou, so he went to a farmhouse to spend the night. The simple village women warmly received them, and in the order of meat first, they put the dishes left over from the day on the hot back end of a double-ear iron pot layer by layer. Ganlong and his party were hungry and ate with relish. Gan Long was full of praise and asked what the dish was called. The village woman casually replied: "One pot of cooking." Qianlong felt indecent, and after a little thinking, he named it "Yipin Pot", which means "This food is worth tasting" and "Those who enjoy this food with Grandpa Long live are worth tasting".
Zeng Guofan and Guo Yipin
Words such as "Yipin Pot" and "Yipin" are also related to Zeng Guofan, an important official in the late Qing Dynasty. In the tenth year of Xianfeng (1860), Zeng Guofan led the elite of Xiang Army to wage a fierce battle with Taiping Army and was trapped in Qimen. On one occasion, he ordered the soldiers to use local materials in the mountains to collect anything they found. Sometimes when I get a chicken and a pig, I will cook them with mountain bamboo shoots, dried beancurd, tofu and dried noodles, and give them to everyone. Later, Zeng Guofan moved eastward, and then the battle of Anqing turned the tide. Recalling the difficult situation in Qimen that year, Zeng Guofan's subordinates later named the "one-pot cooking" they ate that year "Yipin Pot" and boasted that they had had a pot of rice with Yipin Guan.
Mr. Hu Shi and Guo Yipin
No matter whether Hu is overseas or at home, there is no shortage of Jixi's famous dish "Yipin Pot". Whenever a distinguished guest comes to the door or entertains a fellow countryman friend, a "one-pot" should be offered. When Hu Shi was appointed ambassador to the United States, he often entertained foreign friends with "one pot" and won a seat of praise.
Liang Shiqiu and Guo Yipin
When Hu Shi was the president of Peking University, he used the "Yipin Pot" to entertain Liang Shiqiu, the son-in-law of Jixi.
