Peel and cut potatoes, cut pork belly, and open the fat side.
Chop onion, ginger and garlic for later use.
Add hot oil to the hot pot. When the oil starts to smoke, stir-fry the oil with low heat.
Stir-fry until the oil turns golden brown, add the remaining meat and stir-fry for half a minute, then add the onion, ginger and garlic.
Stir-fry until the color is as shown in the figure (about one minute, you can see the color by yourself), add the spatula and soy sauce, and then pour in the potato pieces and stir fry.
When the potato pieces are even in color, add some sugar and stir-fry for about half a minute.
Add a little soy sauce, not too much, so as not to turn black.
Stir-fry for about three minutes to turn the potato pieces into beautiful golden yellow.
Add the water that has just eaten the potato pieces, two star anises, 4-5 peppers, and a fragrant leaf (one more thing in the picture, I'm going to take out two spoonfuls).
After the fire boils, turn to medium heat for stewing, stir-fry several times in the middle to avoid burning the pot.
About ten minutes, when the soup thickens and thins, add the right amount of salt and chicken essence and stir-fry for half a minute.
Sprinkle with chopped green onion, pan and plate!
