The Historical Story of Longjing Shrimp

The historical story of Longjing shrimp can be traced back to the Ming Dynasty. According to legend, during the Ming Dynasty, a wealthy Confucian scholar visited the West Lake in Hangzhou. When traveling, he went to Tiger Running Spring and saw a shrimp swimming in the sun, which attracted people's attention. In order to find inspiration, Confucian scholars use shrimp swimming to summon the natural landscape. He wrote a story called "the fragrance of fat and water", which described a delicious food cooked with West Lake Longjing tea and shrimp.

In the Ming Dynasty, Longjing shrimp became one of the famous cuisines in Hangzhou. The then emperor Zhu Yuanzhang heard about the delicacy of this dish and once came here to taste it. Although the value of shrimp in the Ming Dynasty is expensive, this dish is cheap and fine, and it is sought after by natural food pursuers, and is gradually loved and respected by people.
