2. Acrylamide is "reducing sugar" and some amino acids produced in the process of frying, roasting and baking. The formation of acrylamide is related to Maillard reaction, such as barbecue and toast, which has a fragrant taste and attractive color. There are basically carbohydrates and protein in food, and acrylamide will inevitably be produced during heating. It can be seen everywhere in our lives.

Second: pollutants.

Chloropropanol is a food pollutant, especially in soy sauce, vinegar, chicken essence and other condiments.

If snacks are found in shrimp slices, they are related to oil. In the process of oil processing, the high temperature action of vegetable oil will produce glycidyl ester and chloropropanediol. As long as vegetable oil is used, chloropropanediol and epoxypropanol will be brought into food more or less, not only snacks, but also fritters and cakes we eat.
